Luckily me for me, I have an extra refrigerator/freezer/pantry in my laundry/storage room. I can make it a loooong time before I absolutely have to shop.

Not me. Bring on the cornbread and Riunite on ice (that sounds nice-heehee). Matt tries to convince me there is a condition called the "Screwtop Blues." I don't buy it.
On to my Granny Bessie's Cornbread Beef Pie (my Granny just turned 90 this year ya'll).
Gather up your supplies.
Today I am trying to use up the rest of the tomatoes before I go back to the store. I normally just use the canned ones. I also don't have any bell pepper so I used jarred roasted red pepper.
Ingredients:
Ground beef
Tomatoes (1 can)
Tomato Sauce (1-2 cans)
Bell Pepper (I don't like green so I use red)
Corn (canned or frozen)
Diced onion
Salt/Pepper
Cornbread batter (jiffy mix or make your own which is why I have the egg, flour etc.)
Directions:
Cook ground beef and onion, add in everything else (except cornbread) and cook until nice and hot. Place in baking pan and then pour batter on top. Bake in 375 degree oven for about 20 minutes (or until your cornbread starts to turn brown).
That is it. It is easy kids. I am sure you could citify it up by adding fancy ingredients and spices, but I like it simple. Let me just say I have never met a person that does not like this. Kids especially love it. If they don't like tomato chunks, just use sauce. If you are a vegetarian, leave out the beef and throw in some tofu crumbles (or whatever it is you eat).
